- —200 g cherry tomatoes
- —20 black olives
- —1 tbsp capers
- —2 tbsp olive oil
- —Zest of 1 lemon
- —Fresh oregano
- —Salt, pepper
Method
- 01Heat oven to 200°C.
- 02Place tomatoes, olives, capers in baking dish. Drizzle oil, season.
- 03Lay cod on top, dress with zest and oregano.
- 04Bake 18 min until flaky. Rest 3 min.
