Ingredients
- —6 tbsp chia seeds
- —400 ml almond milk
- —2 tbsp cocoa powder
- —2 tsp maple syrup
- —1 tsp vanilla extract
- —pinch of salt
Method
- 01Whisk together the cocoa, maple syrup and vanilla into the almond milk until completely dissolved — there should be no lumps of cocoa remaining.
- 02Stir in the chia seeds. After 5 minutes, stir again — this is important so the seeds do not clump at the bottom. Chia seeds absorb liquid and expand to about 10 times their size.
- 03Refrigerate for at least 4 hours or overnight. The pudding is ready when it is thick — like yogurt. Serve in a glass or bowl.
