- —8 Medjool dates, pitted
- —60 g walnuts
- —2 tbsp ground flaxseed
- —1 tsp cinnamon
- —1 tbsp cocoa powder
- —pinch of salt

Method
- 01Place the dates and walnuts in a food processor. Blitz until you get a sticky mass that holds together — about 30–60 seconds on high. If it crumbles, add a date or two.
- 02Add the ground flaxseed, cinnamon, cocoa and a pinch of salt. Pulse again until fully combined — the mixture should be dark, fragrant and slightly glossy.
- 03Dampen your hands slightly so the mixture does not stick. Roll into 8 equal balls. Refrigerate for 20 minutes — they will firm up and be much easier to eat.
