Ingredients
- —300 g frozen edamame in pods
- —1 tsp sea salt
- —1 lemon, zested and juiced
- —1 tsp sesame oil
- —chilli flakes
Method
- 01Add the edamame to boiling salted water. Cook for 4–5 minutes — the pods should turn bright green and soften slightly. If cooking shelled beans, the timing is the same.
- 02Drain the water. In a bowl, mix the lemon zest, lemon juice, sesame oil and a pinch of chilli. Add the hot edamame and toss to coat — hot edamame absorbs the dressing better.
- 03Sprinkle with sea salt and serve warm. To eat the pods, pop the beans out with your teeth — that is the traditional way.
