Ingredients
- —400 g lactose-free Greek yogurt
- —2 tbsp honey
- —1 tsp vanilla extract
- —150 g mixed berries
- —2 tbsp pumpkin seeds
- —1 tbsp dark chocolate chips

Swap honey for maple syrup and use lactose-free yogurt to make this FODMAP-friendly.
Method
- 01Mix the yogurt with honey and vanilla in a bowl. Spread onto a parchment-lined baking tray about 1cm thick — use a spatula or the back of a spoon to smooth it out evenly.
- 02Scatter berries, seeds and dark chocolate chips evenly over the surface. Press them in gently so they do not slide off when frozen.
- 03Freeze for at least 3 hours — the surface should be completely solid.
- 04Remove from the freezer and immediately break into irregular shards with your hands. Serve right away — it melts quickly at room temperature.
