Ingredients

- —400 g Canned tomatoes
- —1 Onion
- —1 Bell pepper
- —1 tsp Paprika and cumin
- —2 tbsp Olive oil
- —Gluten-free bread, to serve (optional)

Method
- 01Heat the oil in a pan over medium heat, sauté the onion and pepper for 5 minutes.
- 02Add the spices and tomatoes, simmer for 10 minutes until thickened.
- 03Make wells in the sauce and crack the eggs into them.
- 04Cover and cook for 6–8 minutes until the yolks reach your preferred consistency.
- 05Serve straight from the pan with fresh gluten-free bread, if desired.
