Ingredients
- —3 beets, cubed
- —1 cup green lentils
- —60 g goat cheese
- —Handful walnuts
- —Mixed leaves
- —2 tbsp olive oil
- —1 tbsp balsamic
- —1 tsp Dijon
- —Salt, pepper
Method
- 01Roast beets at 200°C, 30 min.
- 02Cook lentils 20 min, drain.
- 03Whisk dressing.
- 04Toss leaves with lentils, beets, scatter goat cheese, walnuts.
