- —Lightly cured salmon — 40g
- —Fresh spinach — 20g
- —Avocado — 1/4
- —Olive oil — 1 tsp

Method
- 01Heat the oil in a pan over medium heat.
- 02Sauté the spinach for 1 minute until wilted.
- 03Whisk the eggs with salt and pepper, and pour into the pan.
- 04Cook for 2–3 minutes until the edges set.
- 05Place the salmon and avocado on one half, then fold the omelette over.
- 06Cook for 1 more minute and serve.
