Ingredients
- —800 g beef chuck, cubed
- —300 g oyster mushrooms
- —2 carrots, chunked
- —1 parsnip
- —400 ml low-FODMAP beef stock
- —2 tbsp tomato paste
- —2 bay leaves
- —1 tsp thyme
- —2 tbsp olive oil
Method
- 01Brown beef in oil in batches.
- 02Transfer to slow cooker with mushrooms, vegetables, stock, paste, herbs.
- 03LOW 6–8 hours until fork-tender.
- 04Season, rest 10 min.
