- —3 carrots
- —2 parsnips
- —1 small celeriac
- —400 ml beef stock
- —2 tbsp tomato paste
- —2 bay leaves
- —1 tsp thyme
- —2 tbsp olive oil
Method
- 01Brown beef in oil in batches.
- 02Transfer to slow cooker. Add vegetables, stock, paste, herbs.
- 03LOW 6–8 hours.
- 04Season, rest 10 min.
