Ingredients
- —1 cucumber
- —80 g smoked salmon
- —3 tbsp lactose-free Greek yogurt
- —1 tbsp capers
- —1 tbsp fresh dill
- —1 tsp lemon juice
- —black pepper

Method
- 01Slice the cucumber into rounds about 1cm thick. Pat both sides dry with paper towel — moisture stops the toppings from sitting properly.
- 02Mix the yogurt with lemon juice and freshly ground pepper. Taste it — it should be lightly tangy and fresh.
- 03Top each cucumber round with a teaspoon of yogurt, a piece of smoked salmon, one caper and a small sprig of dill. Serve straight away.
