Ingredients
- —2 slice Sourdough bread
- —½ Avocado
- —40 g Red cabbage, shredded
- —30 g Sweet pepper, thin strips
- —20 g Carrot, grated
- —2 tbsp Plain yogurt
- —1 tsp Dijon mustard
- —1 tsp Lemon juice
- —Salt and pepper

Method
- 01Whisk together the yogurt, mustard, lemon juice, salt and pepper to make a sauce.
- 02Mash the avocado and spread it on one slice of bread.
- 03Toss the cabbage, pepper and carrot with half the sauce.
- 04Pile the vegetable mix onto the sandwich and drizzle with the remaining sauce.
- 05Cover with the second slice and cut in half.
Why this works
Red cabbage and pepper add fibre that supports gut health, and avocado's fats help the body absorb fat-soluble vitamins from the vegetables. Long sourdough fermentation breaks down fructans, which may ease digestion for those sensitive to them — this is not the same as reducing gluten, and sourdough is not suitable for celiac disease.
