- —50 g Cream cheese
- —40 g Marinated artichokes, chopped
- —20 g Fresh spinach
- —1 tsp Lemon juice
- —Black pepper

Method
- 01Toast the bread lightly in a dry pan if you like.
- 02Mix the cream cheese with the chopped artichokes and lemon juice.
- 03Spread the mixture on one slice of bread.
- 04Top with spinach and season with pepper.
- 05Cover with the second slice, press gently and cut in half.
Why this works
Long sourdough fermentation breaks down fructans (a type of FODMAP), which can make it easier to digest for people sensitive to fructans — note this is not a gluten reduction, and sourdough is not suitable for people with celiac disease. Cream cheese and spinach add calcium and magnesium.
