Ingredients
- —200 g Cooked chickpeas (or tinned)
- —250 g Pumpkin, cubed
- —1 ½ tbsp Tahini
- —1 tbsp Lemon juice
- —1 tbsp Olive oil
- —½ tsp Turmeric
- —Fresh herbs (cilantro or parsley), to serve
- —Salt and pepper

Method
- 01Preheat the oven to 200°C.
- 02Toss the pumpkin with oil, turmeric and salt, and roast for 20–25 minutes until tender.
- 03Warm the chickpeas in a pan for 3–4 minutes.
- 04Whisk the tahini with the lemon juice and 1–2 tbsp water until smooth.
- 05Spoon the pumpkin and chickpeas into a bowl and drizzle with the sauce.
- 06Scatter with fresh herbs before serving.
